Pink Gin and Tonic

Get in the pink with a delightful pink non-alcoholic gin and tonic, fashioned with dried rose buds and Peychaud's bitters.

Ingredients

• 2.5 oz The Spirit of Gin
• 3 oz of excellent tonic water
• 2 dashes of Peychaud's bitters
• Dried rose buds and juniper berries

Method

1. In a large wine glass add 1 large ice cube, 2 dashes of Peychaud's bitters, The Spirit of Gin and some dried rosebuds and juniper berries.
2. Stir to integrate the bitters
3. Sip and enjoy.
4. If you like to show off, add some rose petals or juniper berries to your ice tray before freezing.

The Garden Variety

Start your day with this refreshing and nuanced cocktail with everything green from your garden.

Ingredients

• 2 ½ oz The Spirit of Gin
• 1 ½ oz 'Garden Mix' *
• ½ oz lime juice
• 2 dashes of cucumber bitters
• 2 dashes of celery bitters
• 2 dashes of saline

Method

1. Add all ingredients to an iced cocktail shaker
2. Shake and strain into an iced rocks glass or mason jar
3. Garnish with a celery and parsley leaf and a pinch of black pepper

Ingredients

• 1 cup of chopped celery
• 1 cup of chopped green bell pepper seeds and veins removed
• Handful full of parsley
• 1 cup of trimmed snap peas
• 2 cups of agave
• 1 cup of water

Method

1. Add to a blender
2. Blend until smooth and strain out solids

Blueberry Beekeeper

This colorful cocktail comes packed with antioxidants and b vitamins, it’s the best way to start your day or end it!

Ingredients

• 2.5 oz The Spirit of Gin
• 6 Blueberries
• 0.75 oz Lemon juice
• .5 oz Lavender honey syrup*
• A bit of Egg white or Aquafaba

Method

1. Add the blueberries to a cocktail shaker and muddle the berries.
2. Add the remaining ingredients and dry shake (without ice) to fluff up the egg white, you can skip this if you are using Aquafaba.
3. Add ice and shake briefly, then strain into your favorite cocktail glass.
4. Garnish with a few lavender flowers and a cocktail pick of blueberries.

*Lavender honey syrup

• To a saucepan add 2 tsp of dried lavender flowers, ½ cup honey, ½ cup water and heat all ingredients until honey has dissolved.
• Remove from heat and let it steep for an hour.
• Strain out the flowers and it's ready to use.
