A sweet bite from the book: Blueberry Oat Flour Waffles

Your Sunday brunch is about to get way more interesting. These nutritious blueberry oat waffles are so sweet, you’ll have a hard time believing they’re gluten-free. Feel free to switch out the blueberries for another seasonal fruit or berry. And if you’re feeling particularly decadent, top the waffles with some chocolate chips and whipped cream.
INSTRUCTIONS:
1. Combine the flour, baking powder, applesauce, milk, maple syrup, lemon juice, and vanilla in a high-speed blender.
2. Blend until combined.
3. Add the blueberries and pulse briefly.
4. Spray a waffle pan or waffle iron with nonstick cooking spray and preheat.
5. Pour some batter into the pan or iron and cook according to the manufacturer’s instructions. Repeat with the remaining batter.
6. Serve with maple syrup.
