Mediterranean Crustless Quiche

1. Place sun-dried tomatoes inside a small glass bowl. Pour 1 cup boiling water over tomatoes and let sit 5 minutes. Drain water.
2. Preheat air fryer to 320°F. Grease a 7” cake pan and set aside.
3. In a large bowl, whisk together eggs, half-and-half, and milk.
4. Stir in sun-dried tomatoes, spinach, onion, olives, garlic, salt, and pepper. Then fold in Cheddar and feta cheeses.
5. Pour contents into prepared cake pan and place inside air fryer.
6. Air fry 35 minutes until a toothpick inserted in the center of quiche comes out clean. Serve.
