Our products are packaged with the finest care. Bottarga can travel and be safely kept in ambient temperatures. Keep refrigerated for longer preservation & to preserve color and cure level. Once opened or exposed to air, bottarga will continue to cure with time, making it darker and sharper which is completely normal. Tightly plastic wrap, removing all air from wrap or vacuum seal for best re-preservation results, then refrigerate or freeze. Enjoy at room temperature. Slice with a sharp non serrated knife to avoid shredding.
Bottarga is completely organic and may contain white (salt deposits), or dark spots & veins which is completely normal. You may carefully remove the consumable membrane before serving, which will remove veins & surface discoloration.
