Quince is a most unusual fruit, about the size and shape of a large misshapen pear with yellow fluffy skin. When cooked with sugar, the quince takes on a character all of its own, to create this delightful conserve. All fruit is hand sorted, the implement used to de-core the quinces is called a 'Plonker'.
The Wilkin family have been farming at Tiptree, Essex since 1757 and making quality preserves there since 1885.
We inspect and prepare our fruit by hand, then cook in small batches using traditional, copper-bottomed pans to ensure the highest consistent quality.
