Illinois Prairie Corn Chowder

Illinois Prairie Corn Chowder is a creamy delight bursting with bright yellow and super sweet corn (non GMO), red peppers and rice. Add diced potato and cream to make this top selling and versatile soup. A Sofi award winner!

Nutrition: Clean Label, Nothing Artificial, No Added Salt, Gluten Free, Non-GMO, Vegan Friendly. Serves: 11

Cooktime: 1.5 Hours

Ingredients: Corn, Rice, Onion, Carrot, Bell Pepper, Celery, Chive, Bay Leaf.

What You Also Need:

  • 2 or 3 White potatoes
  • 8 cups Chicken broth
  • 2 cups Heavy or whipping cream
  • Optional: Add diced chicken breast, crabmeat, or clams to taste for meatier chowder.
  • Optional: 2 or 3 Ears of fresh corn

Cooking Instructions:

  1. Peel and dice potatoes and place in a 4-quart pot.
  2. Add chicken broth and bring to a boil.
  3. Reduce heat and stir in contents of Illinois Prairie Corn Chowder Mix. Return to a simmer, cover and cook for 45 minutes.
  4. Add heavy cream and heat uncovered on low for 30 minutes until slightly thickened.
  5. Remove bay leaf before serving. If desired add salt and pepper to taste.
  6. When fresh corn is available, cut the kernels off 2 or 3 cobs and set aside. Add cobs to the broth with the potatoes and continue with the recipe. Remove cobs and add the fresh corn with the cream.
Virginia Blue Ridge Broccoli Cheddar Soup

Virginia Blue Ridge Broccoli Cheddar Soup

Beautiful broccoli florets combine with fresh additions of cream and cheddar cheese to create this decadent classic. Perfect for a lovely luncheon or delicious supper.

Nutrition: Clean Label, Nothing Artificial, No Added Salt, Gluten Free, Non-GMO, Vegan Friendly.

Cooktime: 45 Minutes

Ingredients: Rice, Potato, Broccoli, Carrot, Onion, Bell Pepper, Bay Leaf.

What You Also Need:

  • 4 cups Chicken broth
  • 1 cup Heavy or half/half cream
  • 1 cup Shredded cheddar cheese
  • Optional Vegetable additions: 2 cups chopped, fresh or frozen broccoli or cauliflower or 5 oz package of fresh baby spinach

Cooking Instructions:

  1. In a 3 or 4-quart pot, bring broth to a boil. Reduce heat. Stir in soup mix and optional vegetable additions plus 1 cup broth as needed.
  2. Return to a simmer, cover and cook for 30 minutes.
  3. Remove from heat. Stir in cream and cheese. Return to stovetop, cover and cook on low for 10 minutes.
  4. Stir in cream and cheese, cover and keep on low heat for 10 minutes longer.
  5. For thicker soup use a hand immersion blender to puree the soup, or gently mash the vegetables with a fork, stir well and serve.
